Sesame Noodles with Crispy Broccoli and Fried Eggs

Have you tried adding tahini to your favorite ramen noodle dish or stir fry? Since discovering how well tahini goes with all of our favorite Asian condiments, we’ve been riffing off this recipe over and over again! It’s a great weeknight dish with the potential for endless variations, depending on which pantry staples you have on hand, and which fresh veggies or favorite protein you want to add. INGREDIENTS
For the sauce
⅓ c Seed + Mill Organic Tahini
If you happen to have Fly By Jing’s Zhong Sauce in your pantry, you can use ⅓ cup and then skip the rest of the ingredients until the extra water! If not, then the following ingredients will also work great!

3 tbsp soy sauce

2 tbsp brown sugar (or sub in date syrup or honey)

½ tbsp mirin or rice wine vinegar
1 tbsp fresh grated ginger (or ground ginger if you don’t have fresh)
2 cloves garlic, finely chopped
1 tbsp finely sliced red chili (or red pepper flakes if you don’t have a fresh chili)
2-3 tbsp water (to thin out the sauce)

For everything else
2 tbsp neutral oil (vegetable oil, grapeseed etc)
4-5 c of broccoli (chopped into 1” size florets - we always use the whole broccoli, stem sliced into small discs, leaves etc)
10 oz packet of dried ramen noodles (or sub in rice noodles or linguine - we love using Banza's chickpea linguine)
1 tbsp toasted sesame or black sesame seeds (or a mix of both)
2 eggs
1/2 bunch of fresh cilantro 
Freshly ground salt & pepper

STEPS
For the sauce

  1. Whisk all the sauce ingredients together in a bowl and set aside. The sauce should be slightly runny, feel free to add 1-2 tbsp more water to thin it down if your sauce seems too thick and sticky. 

For everything else

  1. Place 2 tbsp neutral oil in a wok or sauce pan on medium heat and, when oil is hot, toss in the broccoli and stir until slightly crispy (4-5 mins).
  2. Place pot of water on the heat and, when boiling, add the noodles, until tender (check the cooking instructions on packet). Add the noodles to the broccoli, add sauce and toss until everything is well combined.
  3. Once ready to serve, fry your eggs (we prefer the yolks slightly runny) and place on top of your noodles, then add sesame seeds, chopped cilantro and red chili slices.
